Dr Carlene Starck is a Postdoctoral Research Fellow at the Riddet Institute, Massey University, Palmerston North. Her research interests include the unique health benefits of specific foods, particularly fruits and vegetables, as well as the role of diet and metabolism in health and disease prevention. Her current research focuses on digestion and the uptake of nutrients from the diet, and the impact of these processes on energy metabolism as a whole.
